Hello all, how are you?
I have been absent from posting for more than a month now, and unfortunately that meant a new battle with gluten and celiac disease. The good news is I'm back up and running and ready to kick it into high gear in the new year with expos, product reviews (I found the best chocolate covered pretzels!). Look for posts in the next few days about the Gluten Free and Allergen Free Expo that is being hosted in Phoenix February 22-23. I am super proud to say I have joined their Blogger Team! Love, The GF GF Since my goal is to continue gain weight, I need a lot of protein and fat. Crackers are edible plates, and they give you so many quick meal options. Top them with tuna, peanut butter and bananas, cheese, cheese and veggies, meat and veggies, Nutella... the list goes on. When I got to my local Fry's I wandered over to the always disappointing, small organic foods section where they keep the gluten free stash. My choices were various flavors of NutThins, or Glutino crackers. The packaging of the Glutino crackers looked far more appetizing than the NutThins did. (Riley says I'm a marketing guinea pig) My Fry's only stocks Original, Cheddar, and Vegetable flavor Glutino crackers. Because I like the ability to have a variety of meals, I got the Original flavor, noting that the box was really light. I'm talking suspiciously light, and at $5.69 per box, I really hoped there would be a reasonable amount of crackers in there. When I got home, I whipped up some tuna and pulled out a few crackers. I was cautious, to be polite. I shouldn't have been worried; the crackers are DELICIOUS. They're flaky and buttery and only 140 calories per 8 cracker serving. Even alone, they are good enough to eat as a quick snack. They kind of remind me of Ritz crackers, but the broken ones weren't as messy as the graveyard of crumbs at the bottom of a Ritz sleeve. The package (4.4oz net wt) contains two individual bags of crackers, each package containing ~16 crackers. There's a lot of air in the bags, which I think accounts for why the box felt so light when I bought them. They're filling, especially with tuna or peanut butter or something protein packed. The crackers are primarily made of white rice flour and corn starch, but each serving of 8 crackers (I usually eat 4-6) only has 5g of fat and 23g of carbs. The allergen information warns that the ingredients definitely include eggs and may include milk. The box also has cute messages all over it, so nice! The Glutino company makes quite a variety of gluten free foods, and they offer an online store if your local grocer does not carry their brand.
I am totally looking forward to trying some of the other things that Glutino offers, especially their Apple Cinnamon Toaster Pastries. Love, The GF GF I'm just kidding Christmas isn't here. But that huge bundle I ordered from Bob's Red Mill is! I ordered this bundle on Friday, December 13, with the fastest free shipping I was allowed to get. Not bad right? This company also rocks because they send you two promotional Baggie clips to seal your goodies. I'll update tonight with the brownies I plan on making after a trip to the grocery store! Love, The GF GF Update 9:43 pm I made it to the grocery store and made the brownies using the mix that I got today. The mix looks and smells just like regular brownie mix, a little grainier. I like crunchy edges on my brownies, so I poured the batter into a pan slightly larger than the standard 13x9. Baked for 25+ minutes (trying to get prime crunchy edges), under my watchful and impatient eye. The top didn't develop that glossy shell like traditional gluten brownies do, and looked more like cake on top. My friends are over and I convinced them to dig in with me. The brownies are pretty good, really soft and fudgy. There is a little bit of grainy-ness to the texture though, probably a result of the nature of the grains used to make gluten free foods. The edges got crispier once they cooled down all the way. My non-gluten free friends loved them which is surprising because they never try anything. Give these a try, I bet they would be amazing with really good vanilla bean ice cream. Love, The GF GF Being gluten free, we know the top brands for gluten free products by heart. I have used Bob's Red Mill All Purpose Gluten-Free Flour before, and aside from its strange scent I overall really liked the product.
